GOOD NEWS. You don’t have to eat less sugar; you just have to eat the right kind of sugar! I have always had a huge sweet tooth. My mom must have binged on Funfetti cake when she was pregnant with me or something. Anyway, I will forever refuse to limit my sugar intake, but do try to eat lots of naturally sugar-filled things instead. This simple and nutritious Melty Pineapple Whip, which is inspired by Disneyland’s Tiki Juice Bar, will make your sweet tooth feel like it’s at the happiest place on earth.

Ingredients:

  • 2 chopped frozen ripe bananas
  • 1 cup chopped frozen pineapple
  • 1/2 cup fresh/juicy pineapple
  • 1/3 cup coconut cream (the thick part of canned coconut milk)
  • 1-2 tablespoons maple syrup or honey

Method:

  1. Cut off the bottom of the pineapple and scoop out the inside to make a bowl
  2. Add all ingredients to a food processor
  3. Blend until creamy
  4. Taste test to make sure it is the perfect blend of sweet, tart & creamy
  5. Transfer from food processor to your pineapple bowl
  6. Sprinkle with shredded coconut for an extra tropical touch
  7. Enjoy by the pool underneath a palm tree 😉
