Sweet & Tangy Sesame Salad
For work (and for fun), I come up with recipes using produce items from weekly Ooooby (Out Of Our Own Backyards) boxes. Many of our customers get super excited to open up a box of local, seasonal, organic fresh fruits and vegetables, but some aren’t sure what to do with all of it! I am happy to be able to come up with tasty recipes to encourage and inspire them to eat the nutritious and delicious goodies they receive from Ooooby.
This week, the boxes were delivered with crisp apples, juicy tangerines, lemons, watermelon radish, celery, red chard, fresh cilantro, mushrooms, green cabbage, yellow onions, carrots, and potatoes. Each weekly newsletter we send along with the box comes with two recipes. One of the recipes I came up with to coordinate with this box was this Sweet & Tangy Sesame Salad. It’s simple, healthy, and yummayy and is made with local and in-season ingredients! Here’s the recipe:
For the Salad:
·1/2 head green cabbage, shredded
·2 cups cooked chicken, chopped (optional)
·1 cup shredded carrots
·1 watermelon radish, peeled and thinly sliced
·2 mandarins, segmented
·4 green onions, thinly sliced
·1/2 cup chopped cilantro, tightly packed
·1 cup crispy wontons
For the Dressing:
·2 oranges, juiced
·4 tablespoons reduced sodium soy sauce
·4 tablespoons honey or agave
·2 tablespoons rice vinegar
·2 tablespoons sesame oil
·1 teaspoon ground ginger
·2 teaspoons black sesame seeds
- Add all salad ingredients, except wontons, to a large salad bowl.
- For the dressing, add all dressing ingredients in a tightly sealed mason jar. Then, shake well.
- Drizzle dressing over the salad, then toss.
- Top with crispy wontons, then serve.
